Sensory analysis of fermented alcoholic beverages from jabuticaba produced in the city of Varre-Sai, RJ

Jabuticaba (Myrciariasp) is a fruit native to the Atlantic Forest, belonging to the Myrtaceae family, and commonly found in Brazil. It presents considerable economic potential because it can be consumed as raw fruit or processed food. In Varre-Sai, RJ, jabuticaba is strongly used in the industrialization of alcoholic beverages. The production of fermented alcoholic alternative is used to avoid waste, and make the most of the considerable nutritional value of the fruit. The content of anthocyanins in jabuticaba ranges from 310 and 315mg/100g, relatively high value compared to other fruits considered rich in antioxidants. Therefore, sensory analyses of jabuticaba alcoholic beverages produced in Varre-Sai can improve the quality of the product and potential sales. Given that the part of jabuticaba rich in phenolic compounds is the bark, the whole use of the fruit is the best alternative to take advantage of its benefits. Sensory analysis evaluated the acceptance of fermented alcoholic of Jabuticaba, in relation to its overall rating attributes, color, flavor and aroma, based on a 9-point hedonic scale, with ends named strongly disliked (1) and strongly liked (9); as well as purchase intention of tasters by a 5-point hedonic scale, with anchor points would certainly buy (5) and would not certainly buy (1). The results showed that the products had good acceptance and the fermented Sweet Tinto was rated best in all attributes, obtaining 90.18% frequency in the acceptance of hedonic scale, with respect to global acceptance. Even in the hypothetical situation of purchase, it received 74.5% of the votes in the good range of the scale. This shows that the alcoholic fermented beverages may be an alternative for the consumption of antioxidants, and that their production can improve the income of farmers as well as help avoid fruit wasting.

Oil and sustainability in Brazil, an intergenerational matter

The aim of this study is to analyse the present discussion in Brazil about the new legislation for the oil reserves in the pre-salt layer in the light of the historical evolution of environmental and energy regulations in Brazil. Based on the principle of sustainable development, we attempt to show the compatibility between the new model and the aims and actions defined in national policies for energy and environment in the Federal Constitution of 1988. The study upholds the construction of a holistic, participative process for the elaboration of national policies, which necessarily contemplates an intergeneration perspective.

The State of Minas Gerais has stood out throughout the country due to the success of its decentralized cultural heritage protection policy, which had resulted in the institution and functioning of municipal councils for the protection of cultural heritage. The study aims to indicate the variables that determine or complicate the implementation of democratic local management of the cultural heritage in the State of Minas Gerais. Results of the analysis suggest that we cannot deny the importance of the structure of selective incentives to produce a more comprehensive and consistent policy.

This paper presents a RASTRO position control structure applied to a case study using the RD5NT robotic manipulator produced by Didacta Italia. The study provides details of the mathematical formulation of the control structure, as well as the procedures used to generate the desired trajectory and identify, in real time, the mathematical model of the manipulator. Following, the control structure is numerically implemented and, through numerical simulations, the quality of the controller is assessed.

Work and vulnerability: the social question on Robert Castel’s thought

The article emphasizes the centrality of the concept of work in the thought of the French sociologist Robert Castel. Despite being best known in Brazil for his concepts of social question and social disaffiliation, the concept of work is crucial in the articulation of the author's thought, notably in his latest writing. The article is divided into four parts. First, it provides a general introduction to the work of Castel. Then, it demonstrates how work can be considered the main social question of contemporary global capitalism. Following, it resumes the relationship between work and social vulnerability. The study concludes by pointing out the importance of understanding work as the main contemporary social issue.

The Baixada Goitacá, or Baixada Campista, is a region known for having an interesting linguistic universe, at times neglected by speakers of the new generations. It can be said that due to the growth of the Norte-Fluminense region many words and expressions used long ago seem to have fallen in disuse. This current work aims at investigating the Facebook fanpage, Campista Cabrunco, regarded as a virtual space that allows rescuing and documenting the linguistic expressions typically found in the Planície Goitacá, thus maintaining alive and passing on the linguistic memory of past generations through cyberspace.

The environmental thinking of Jose Bonifacio de Andrada e Silva

The study aims at emphasizing the strong presence of the renowned Patriarch of Independence Jose Bonifacio de Andrada e Silva in discussions on environmental degradation that occurred in Brazil in the nineteenth century. The author registered his concern about deforestation in the Brazilian rainforests for farming and charcoal production, and warned about the depletion of water resources, as well as the disappearance of important trees – important raw-material for the shipbuilding industry. He proposed replanting seedlings, the rational use of natural resources, and recommended the adoption of agricultural practices only in valleys. These proposals show an aspect of Bonifacio that is unknown to Brazilian historiography.

Interdisciplinarity in elementary schools: an analysis of testimonies given by teachers

This work aims to analyze the contribution of interdisciplinarity in elementary schools. An interview guide was prepared with five questions regarding the vision of elementary school teachers about interdisciplinarity, interdisciplinary practices, problems and activities involving the theme "water". The questionnaire was conducted with 17 municipal elementary school teachers in Florianópolis/SC. Results show that teachers understand the concept of interdisciplinary. Moreover, despite saying they are prepared to work in an interdisciplinary way, they present reasons to justify their difficulty in performing interdisciplinary activities in the classroom. Finally, the theme "water" proved to be a cross-cutting pertinent issue to promote interdisciplinary activities.

Labour and reproduction of families of workers benefiting from the Bolsa Família Program in Campos dos Goytacazes, RJ

This paper presents a profile of families of workers benefiting from the Bolsa Família Program in Campos dos Goytacazes, RJ, as well as their process of social reproduction. Unlike many assertions, the research confirms that most of these beneficiaries keep their status of precarious, underpaid and overexploited workers. The crisis in the local sugar production has changed the profile of the labor market, especially for the poorest workers. Currently, the sugar cane industry is no longer one of the main labour alternatives. It is worth mentioning the rates of female single-parent families as an arrangement that reduces defensive strategies against precariousness and unemployment, and increases dependence on the Program.

Physical-chemical, microbiological and sensory evaluation of spicy soybean paste

This study aimed to develop a spicy soybean paste. Three formulations of spicy soybean paste were prepared, and then submitted to prior microbiological and sensory acceptance test with 50 untrained tasters. The most accepted formulation was evaluated on the microbiological quality during its shelf life. Significant differences were found (p <0.05) for the attributes flavor, aroma, texture and overall impression for the formulation B of spicy soybean paste, the most accepted of the two. It was found that the microbiological analyzes are within the established by the Technical Regulation on microbiological standards for food nº 12 of January 2nd, 2001. The mean values found for the physicochemical analyzes were 38.93% for moisture, 11.00% for lipids, proteins and 11.12% to 6.85% for ash content. The spicy soybean paste is a good food option,  presenting good sensory acceptance.

Evaluation of the use of transglutaminase in dairy drinks made from goat milk

The aim of this study was to evaluate the use of transglutaminase in dairy drinks made from with goat milk with 45% of serum, and the physical, chemical, microbiological and sensory characteristics of these drinks within the expiration date of the product. In the first phase, five different levels of transglutaminase (0, 0.2, 0.3, 0.4, 0.5 U/g) were evaluated. In the second phase, the drink that had the best sensory acceptability was evaluated for 30 days. It was observed that the dairy drink treated with 0.5 U/g transglutaminase showed higher sensory acceptability in relation to the 7.18 overall impression. The color values of the dairy drink treated with 0.5 U/g showed no significant difference (p<0.05). The values of lactic acid bacteria are established according to the legislation. Results show the feasibility of the use of transglutaminase in dairy drinks.

Female homosexuality: the case of the Carlos Tinoco da Fonseca female prison in Campos dos Goytacazes, RJ

The purpose of this article is to show that homosexual relationships between inmates go beyond the common sense discourse that these relationships are established merely for the fact that women feel needy. Under menswear are women who want to achieve security and privileges our society reserves exclusively to men. Their passionate speeches and letters conceal symbolic material and interests. Actually, homosexual relations reproduce the gender order as, mostly, male domination. The aim of this study is to identify the factors that lead female prisoners to establish a homosexual relationship with each other when incarcerated, as well as show how the discourse and masculine practices add value and status among the female prison population.

This article aims to present how to operate home health care practices. It describes  the influence of the experience given by the Italian psychiatric reform in democratic societies, with emphasis on the intervening dimensions and replacement services. The study indicates the guidelines and strategies established for the promotion of health care in individuals under psychological distress in the deinstitutionalization process. It also addresses the professionalization and the performance of caretakers in home services. Based on a review of the literature, this paper poses some questions to guide the ways outlined for the construction and establishment of professional practices by mental health caregivers.

Actions and omissions in the management of demolition and construction waste in Caraguatatuba, SP

Civil construction is one of the most significant activities for the social and economic development of the country. However, in the traditional construction process, the intense generation of demolition and construction waste (DCW) has caused negative impacts in society, due to: high volumes of generated waste, frequent clandestine and inappropriate disposals, elevated risks of environmental contamination, and difficulties in waste separation for recycling. This study aims to evaluate the public policies adopted in the city of Caraguatatuba, northern coastline of the State of São Paulo, estimating the annual volume of generated DCW, and identifying the actions and participants involved in them.

Why does Brazil need racial quotas? An analysis of the admission of quota students at the Universidade Estadual do Norte Fluminense / UENF

This paper presents the results of a study about the quota system at the Universidade Estadual do Norte Fluminense Darcy Ribeiro (UENF). Quotas at UENF cover the following beneficiaries, after low-income verification: public school students, blacks, indigenous, people with physical disabilities, and children of police officers killed or disabled in the line of duty. The study focused on the comparative analysis of the 2008 and 2009 entrance examinations. The relationship between supply and demand for vacancies as well as the passing grades were analyzed. The analysis revealed that there is a greater demand for quotas in the courses in which the candidate/vacancy ratio is higher, and that quotas are unnecessary for approval in many courses.

The behavior in technical training professional soccer players: a study from the perspective of selfregulation of learning

A literatura especializada tem enfatizado que em diversas áreas profissionais o comportamento autorregulado pode contribuir para o bom desempenho da pessoa que almeja alcançar determinado objetivo. A partir desse contexto, e tomando como referência as dimensões que integram o construto da autorregulação da aprendizagem (dimensões cognitiva/metacognitiva, motivacional, comportamental e contextual) nas diferentes fases do comportamento autorregulado (de antecipação, de execução e de reflexão ou avaliação final da tarefa), fez-se um estudo de caso, de natureza quantiqualitativa. O estudo teve por objetivo verificar se o comportamento dos atletas profissionais de futebol em treinamento técnico, integrantes da equipe do Americano Futebol Clube, localizado em Campos dos Goytacazes – RJ correspondia ao que preconiza a literatura sobre autorregulação. Levantaram-se as hipóteses de que as dimensões em que os atletas apresentavam melhor desempenho seria nas dimensões motivacionais e comportamentais, e menos favoráveis nas dimensões metacognitiva e contextual. Utilizaram-se como recursos de observação um questionário e grupo focal (entrevista coletiva), esta com a finalidade de aprofundar alguns resultados obtidos através do questionário. O modelo de autorregulação da aprendizagem, além de ter contribuído para a elaboração das perguntas dos instrumentos utilizados, ofereceu também subsídio para a análise dos dados. As hipóteses foram parcialmente comprovadas: os atletas apresentaram melhor domínio na dimensão motivacional, principalmente no que diz respeito à crença de autoeficácia (100% do grupo), seguida da dimensão cognitiva/metacogntiva; nas outras dimensões (comportamental e contextual) os resultados demonstraram comportamento menos eficaz dos atletas. O estudo pode contribuir para a reflexão e ação de atletas, comissão técnica e demais profissionais envolvidos no futebol, além de abrir perspectivas para outros estudos.

Characterization and analysis of degraded areas of the Santo Amaro Settlement

Improper land use is responsible for environmental degradation due to declining fertility, loss of biodiversity, erosion and compaction. In rural settlements, it is commonly observed that prior land use contributes for the degradation of soils ,including areas of permanent preservation. This study aims to identify the degraded areas in the Santo Amaro settlement, in a district in Campos dos Goytacazes, to analyze the degree of deterioration of soils, and its possible causes. Field observations showed seriously degraded areas because of erosion in the form of gullies and ridges as forests fragments in natural regeneration. Furthermore, the study found absence of forest fragments in natural regeneration within permanent preservation areas (APP), coverage on top of the hills and slopes, as well as removal of riparian vegetation.

Evaluation of distribution uniformity of retractable sprinklers in garden irrigation

This work presents the evaluation of the uniformity of water application for PGJ sprinklers concealable model 04 - 10 cm (threaded ½’’, distance of 11.6 m, flow of 1.23 m3 h-1 and arc set to 180º), used to irrigate the gardens at IFES campus Alegre, Espírito Santo. Were monitored climatic factors and the relationship of applied water levels, the working pressure, the CUC and UDC coefficients. Results indicated blade average of 6.42 mm h-1, CUC 99.66% and 85.04% of CUD water when operating pressure equal to 3.92 bar was used.

Text corrections in the school context from a dialogical perspective

This article discusses a teacher’s text correction approach with students enrolled in the  4th period  of a Young and Adult Education course at a municipal school located in Itapema, Santa Catarina. The “corpus” used in this article made up of transcriptions of the teacher’s speech, in which her pedagogical conceptions became quite evident, especially in regards to normativism in  language use. Theoreticalreferences include: Costa Val, Ilari, Geraldi, Elias, Gil Neto, Cavalcante, Antunes, Passarelli, amongothers. The analysis showed that the text correction practice carried out by the teacher does not help students to think about how language works.
