Desenvolvimento e caracterização de requeijão funcional
Requeijão processed cheese is a product obtained from melting the curd, which can be obtained by acid or enzymatic coagulation of milk, optionally added with cream and/or butter and/or anhydrous milk fat or butter oil and may be added with condiments, spices and other food substances. Due to the wide range of possibilities for adding requeijão and increased consumer demand for dairy products that have health benefits beyond their basic nutritional functions, it is increasingly looking to replace undesirable components such as fat with others that bring benefits such as green banana biomass (source of resistant starch) and also the addition of functional substances such as probiotic crops. Therefore, in general, this study aimed to develop functional requeijão with probiotic addition and reduced fat content, as well as to study the influence of the addition of these ingredients / substances on the technological, physicochemical, microbiological, functional and sensory characteristics of requeijão. The elaborated requeijão included the addition of encapsulated Lactobacillus acidophilus as a probiotic source and green banana biomass as a partial fat substitute, totaling four treatments and one control. Analyzes were performed to evaluate probiotic viability, microbiological conditions, centesimal composition, water activity, resistant starch, color, texture profile, lipid profile and sensory acceptability. The formulations presented satisfactory probiotic count (8 to 10 log CFU.g-1) during the 45 days of storage and gastrointestinal simulation. The addition of green banana biomass and the reduction in fat resulted in changes in the centesimal composition of the requeijão, and their moisture and protein content decreased, and only one formulation can be considered as low fat. The yellowish white color of the formulations was altered according to the composition as well as the texture parameters, and the treatments with the highest percentage of green banana biomass presented the greatest alterations. Finally, the results indicate that green banana biomass and encapsulated Lactobacillus acidophilus may be a potential option as ingredients to be used in the formulation of requeijão cremoso by the dairy industry, as they showed satisfactory behavior as a partial fat substitute and viability probiotics, respectively, conferring a different nutritional and functional value to this product.

Extração assistida por ultrassom de β-glucanos de Lentinula edodes utilizando solvente eutético e água
Shiitake is a mushroom rich in β-glucan type polysaccharides, long-chain molecules that have antioxidant properties that are beneficial to human health, in addition to having isolated physical properties of interest to the food industry. In this way, the main objective of this study was to obtain shiitake β-glucans through ultrasound-assisted extraction. Preliminary tests were carried out to determine the temperature and the extraction time. Subsequently, a central composite rotational design (CCRD) varying the pulsation cycles and amplitude was performed where the yield and antioxidant activity of the extracts were obtained. Extractions were carried out using two solvents, water and a deep eutectic solvent (choline chloride: glycerol). The best yields using eutectic solvent were 25.11 and 23.74% in 88.36% amplitude and 0.93 pulse cycle and 100% amplitude and 0.75 pulse cycle, respectively, while for water it was of 23.47 and 22.75% with 100% amplitude and 0.75 pulse cycle and 88.36% amplitude and 0.93 pulse cycle, respectively. Analyzes of total sugars, proteins, and Fourier transform infrared spectroscopy (FT-IR) were performed on the ethanol precipitated extracts, obtaining higher concentrations of sugars under the same conditions as the best yields, while proteins were better extracted at intermediate amplitudes using water and higher amplitudes with eutectic solvent. In addition, bands were found in the FT-IR similar to other studies that analyzed β-glucans. Thus, this study evaluated a eutectic solvent not used so far in the ultrasonic extraction of antioxidant compounds, demonstrating an alternative to obtain compounds with properties of interest to the food or pharmaceutical industry from shiitake outdated for human consumption.

Cabeça debaixo da terra: escrita literária e saúde em Lima Barreto
This work presents a fictional experience in order to denote perspectives on the relationship between Literary Writing and Health in the work and life of writer Lima Barreto, mainly from the novel Clara dos Anjos. In this sense, I use Literary Criticism and Mental Health supports in order to question the relationship of Resentment within the Health/Disease binomial demonstrated by the philosopher Nietzsche. Starting from marks in the biography and in the work of the writer of Triste Fim de Policarpo Quaresma, I try to open interpretative fields through fiction as a possible proposal for the re-elaboration of History beyond criticism, emphasizing a character of liberation of certain concepts that wall an author within. from certain lines of thought and research, but mainly to rewrite one of the possible solutions for the black character, Clara dos Anjos, in order to think about her contemporaneity within the history of black women. Therefore, I raise the Nitzschean idea of Resentment as a necessary process to see the psychic and social disease that involves the post-slavery drama, and thus create means of liberation, writing a health concomitant with the disease, using the unhealthy path of a body and thought to generate a new immune system. As a method, I chose to have the characters in contact with part of the History of Brazil, from the Minas Conspiracy to the Hospices, using the investigation that writer Lima Barreto carried out in his time, questioning the Intelligence around him, whether in his literary generation, in Science or Medicine. I demonstrate these points by helping me with Gilles Deleuze's Literature/Health relationship, in which he brings the writer closer to a kind of doctor of society, as well as Nietzsche, who does not oppose health/disease, but sees the need for the game of both for the constitution of the vital body. As a temporal strategy, I create a historical thread from 1900 to 2022, from the young Lima Barreto to the centenary of the writer's death, to give continuity to scientific and artistic formulations at the beginning of the 20th century.

Cases inspiradores: comunicação na prática
A construção do conhecimento não se dá de forma isolada, desconectada da realidade, dos fatos e da sociedade. Como um processo sistemático em sua construção, intercâmbio e agregação de saberes, a pesquisa apresenta-se de forma constante tanto na rotina docente quanto na formação de profissionais. O grupo de pesquisa EstratO – Estratégias Midiáticas Organizacionais vem, desde 2015, atuando fortemente nessa construção, contribuindo para a consolidação e atualização da área da comunicação e informação. Esta obra representa a continuidade do trabalho já realizado, tendo agora, como foco, a publicação de cases inspiradores em Comunicação Organizacional. Autoimagem genital pós parto vaginal e cesariana
During the gestational period, the body undergoes numerous changes, especially physical and hormonal, which added to the birth of the baby, as well as breastfeeding and the emotional aspect involved in the puerperium imply major repercussions in the woman's life. Among so many are sexual function and body and especially genital self-image. Given the importance of these aspects for a better quality of life, professional knowledge is fundamental, so that they can guide and conduct the treatment of these women, always thinking about their completeness and satisfaction. The aim of this study was to compare the genital self-image after normal birth and after cesarian birth. For that, a cross-sectional study with observational design has been made, in which evaluated 29 women (13 after normal birth and 16 after cesarian birth), over 18 years old, in the third mont after birth. An active search through the Santa Maria's Primary Health Units was made, followed by phone contact to invitate them to be a part of this study and ask questions if needed. After the permission, it was sent a link for acess to the formulary. an identification form was used, with ginecologic and obstetric data from the mother, as well as infos about the baby and its birth, in addition to the Female Genital Self-Image Scale (FGSIS), aiming to evaluate the genital self-image. The categoric variables were analyzed descriptively by means of simple frequency and percentages, and the numerics by position and dispersion means. The data were considered as non-parametric distribution trough the Shapiro Wilk test. Thus, the Mann Whitney's U-Test, and the square-Q test or Fisher's Exat were used. In all those tests, it was adopted p<0,05. The statistics analysis were made with the SPSS 22.0 software. It hasn't been noticed differences in the groups for genital self-image evaluation by the FGSIS total score, however, it was identified a distinction in the results from the "confort in letting a health professional examin your genitals" item, with inferior results from the post partum. It is not possible to infer about the benefits superiority for the ways of birth relating to the genital self-image, due to the study's low sampling. However, it is possible to correlate this research's findings with the obstetric interventions happening in the current scenarium and, this way, makes the attendance non-personal and disrespectful.
