Analysis of the quality of coalho cheese sold at a free fair in the municipality of Campina Grande-PB

Typical product of the Brazilian northeast, the coalho type cheese has a great economic and cultural importance for this region. In the state of Paraíba, it represents a significant means of income generation for milk producers, most of them producing cheeses like curds in an artisanal way. Therefore, raw milk is used as the main raw material for the manufacture of this delicacy, so used in northeastern gastronomy. The lack of use of pasteurization methods of the food matrix becomes a favorable means for the dissemination of product contamination. the absence of good manufacturing practices, associated with inadequate transportation, packaging and marketing, leaves consumers exposed to the risk of foodborne illnesses. due to the economic and cultural importance in the trade of this product in the evaluated city, this study aimed to analyze the microbiological quality of the artisanal rennet cheese sold at the fair. Thus, 10 samples from different commercial points of the cheese fair in the city of Campina Grande, Paraíba, were analyzed. Microbiological analyzes followed the protocol of current legislation for this product, where they were evaluated for the presence of total coliforms, Staphylococcus aureus, Salmonella spp. and Listeria monocytogenes. Most of the samples analyzed were above what is allowed by the regulations for total coliforms, Salmonela spp. and Listeria monocytogenes. From the results of the microbiological analyses, inadequacies of the microbiological standards of the coalho cheese sold at the central fair were demonstrated, as it presents a large amount of pathogenic microorganisms above the limit required by Brazilian legislation, which raises a public health alert.

Determinants of water and sanitation service satisfaction: The opinion of stakeholders in Pacasmayo

The purpose of this study was to analyze the critical success factors determining satisfaction (CSDFS) according to the opinion of stakeholders linked to the management of water and sanitation services in the Municipality of Pacasmayo in Peru. A non-probabilistic purposive sampling of 55 community stakeholders in the 11 central sectors and 25 civil servants was carried out. A questionnaire based on the Best - Worst Scaling (BWS) was used, which considered 16 indicators and four dimensions: Technical Aspects of Service, Quality Aspects of Service, Economic and Financial Aspects and Legal Aspects and political environment. Reliability was done with the Kuder-Richardson Coefficient (KR-20= 0.841). Scores were calculated and perceptions of both groups were compared (Mann-Whitney U Test). The exploration of the FCEDS in community stakeholders and officials highlights the importance of service quality and technical aspects, giving less interest to legal aspects and political environment, as well as economic and financial aspects. The comparison of the perceptions of both study groups did not show significant differences (p-value > 0.05). It is recommended that the levels of co-responsibility of the stakeholders involved in the management of water and sanitation services in Pacasmayo be improved and that the needs arising from the identification of the FCEDS be addressed.

Treatment of animal bite injury - Clinical case report

Lesions on the face, affected by domestic animals, are among the most common types of trauma, particularly in children. The injuries caused in this region, can generate a series of morbidities such as important tissue loss, infections, death in more severe cases, in addition to irreversible scars when the wound is liable to repair, therefore, post trauma care should aim, at minimization of healing, in addition to functionality, seeking as much aesthetics as possible. A thorough initial clinical evaluation is essential, and, from there, the definition of the most appropriate treatment for the specific case is essential to reduce the risk of more serious infections and, consequently, the successful treatment of these patients. This paper aims to report a clinical case of a child victim of animal bite with the presence of extensive laceration in the frontal region, attended by the FOA Unesp Oral and Traumatology Maxillofacial Surgery service, treated by primary repair and prophylactic antibiotic therapy, in which the result of the treatment was considered satisfactory with no infection.

The maracujazeiro-do-mato (Passiflora Cincinnata Mast.) and its economic importance: A narrative review

The commercial value of passion fruit has great relevance; however, the agronomic potential of wild species has not been fully explored. The objective was to discuss about passion fruit and its potentials from an economic perspective. The research has a qualitative approach, of an exploratory nature, whose procedures are characterized as narrative review. The research was carried out in the year 2021 from documents indexed in journals in the area from selected descriptors. Inclusion and exclusion criteria were considered, resulting in five documents for analysis. From the bibliographic search carried out it was possible to determine that there are promising potentials, especially in the market, for passion fruit-do-mato. Due to its resistance to drought, handling, and different types of soil, its different forms of processing, and its phytotherapeutic potential, for example, the species composes a list of perspectives that culminate in quality products. In this perspective, more studies are needed that can bring reflections that make the debate broader and more efficient, as well as practical data that allow the discovery of these potentialities.

Pre-harvest glyphosate desiccation on barley seed quality

The experiment was conducted into two stages, the first being the barley seed production and application of glyphosate and the second the vigour tests in the laboratory. Both stages were performed at the Experimental Farm of Agrarian Sciences at Grand Dourados Federal University (UFGD). In field, four cultivars of barley was sowing being: BRS Cryst, BRS Kallibre, BRS Demeter, BRS Sampa. For desiccation, the glyphosate herbicide (480 g L-1 of active ingredient) was used, applied using a backpack sprayer at dose of 5 L ha-1. The experimental design used was randomized blocks, and each cultivar was divided into five replications, applying the herbicide in four of them leaving one without application for control. The application was made when seeds presented water content close to 50%. At second stage, eight evaluation were made being one at the day of glyphosate application, one, two, three, eight, ten and fourteen days after application and without application in natural physiological maturity. In each evaluation, sowing was performed according to Rules to Seed Analysis. The analyses were: First count,  percentage of germination,  germination speed index, mean germination time, mean germination speed, accelerated aging and synchronization index. Glyphosate has interfered negatively in the physiological maturation of barley seeds when the herbicide was applied in pre-harvest. The results obtained showed that there was an increase in seeds germination after 14 days of application, however, the means were significantly smaller in relation to seeds harvested at the point of physiological maturation without glyphosate application.

Guillain-Barré syndrome in post-COVID-19 syndrome: Literature review

Guillain-Barré Syndrome (GBS) is an acute immune-mediated polyneuropathy, also determined as acute idiopathic polyradiculoneuropathy, given by an acquired autoimmune disorder. This syndrome is marked by the loss of the myelin sheath and tendon reflexes, encompassing acute immunomediated polyneuropathies, which can be subdivided into two types: demyelinating and axonal, which can be triggered by an immune trigger due to viral, bacterial, fungal etiology. or genetics. When it comes to GBS by etiology by SARS-COV-2, there are reports in the literature of affected patients who developed neurological manifestations in the post-COVID-19 syndrome, determined by the presentation of symptoms for more than three months after the acute phase of the disease. In this sense, this article aims to describe the main clinical manifestations, diagnosis and treatment for patients affected by GBS in the post-COVID-19 syndrome. A retrospective, bibliographic review was carried out in the MEDLINE / PubMed and LILACS databases, using the descriptors / keywords and Boolean operator: "Coronavirus Infections" AND "Guillain-Barré Syndrome". 86 articles were located and after applying the inclusion and exclusion criteria, eight case report articles were included for analysis. The sex most affected was male (75%), with a mean age of 52 years with a minimum of 21 years and a maximum of 66 years. The presentation symptoms for COVID-19 ranged from asymptomatic (12.5%) to symptomatic (87.5%) with the presence of cough (75%), fever (62.5%) and others. The first neurological manifestation after COVID-19 was in 13 days, with the main neurological manifestations being bilateral peripheral facial paralysis, dysarthria and areflexia. When analyzing the cerebrospinal fluid, there was the presence of albuminocytological dissociations (87.5%) and olioclonal bands (12.8%). When electroneuromyography was performed, the neurophysiological subtypes found were classified mostly by demyelinating neuropathy (50%), with its main variant for GBS for classical motor sensitivism (62.5%). Most patients, after diagnosis of the main variant for GBS (87.5%), were treated with intravenous immunoglobulin (75%) and plasmapheresis (12.5%), with favorable clinical evolution and later hospital discharge.

Recovery of liquid effluent H2SiF6 from SSP acidulation: Analysis of the dynamic behavior of the pressure filter by computational

Acidification of phosphate rock as one of the mainstages of the production process of phosphate fertilizers. Sulfuric acid is used to obtain phosphoric acid, one of the intermediate products of the fertilizer industry.  This stage of process is already widely used for production of several types of fertilizers, among them Simple Super Phosphate (SSP), generating the liquid effluent hexafluorsilicic acid (H2SiF6) as a by-product from secondary reactions in the process. In this works, we simulate a mathematical model to represent dynamic behavior of filtration and consolidation in pressure filter, equipment used to recover H2SiF6 in production of SSP, in order that it can be used in process itself, helping in the efficiency of acidulation stage of phosphate rock, reducing production costs and promoting a more sustainable process. This study predicts a recovery of 92,07% of H2SiF6 fed and retention of 73,38% of solids.

Optimization of ultrasound-assisted extraction of bioactive compounds from Caryocar brasiliense

Caryocar brasiliense, popularly known as pequi, is a species that has a high content of phenolic compounds with biological activities. In this work, the ultrasound-assisted extraction process of bioactive compounds of the pequi leaves was optimized with Box-Behnken factorial design. Four independent variables were investigated: sample concentration (liquid-solid ratio, LS), ethanol concentration (EtOH/H2O % v/v), UAE time (ultrasound-assisted extraction) and UAE temperature. The Response Surface methodology was used to point out the most important variable in the process. The results revealed the EtOH/H2O (% v/v) the most significant effect on the extraction of phenolic compounds. The optimum condition for extraction was an ethanol concentration of 60 %, UAE time of 30 min, a UAE temperature of 42 °C, and LS 18.7: 1. Under these conditions 6.30 mg GAE/g DW (n = 3) were extracted (mg gallic acid equivalent /g of dry weight). The observed experimental results confirm the suitability of the model used and its success for the optimization of extraction conditions.

Sensorial, physicist-chemistries and microbiological analyses of samples of honeys produced for Apis mellifera in the region of the Cocais Maranhenses, Maranhão State, Brazil

This work had as objective to proceed sensorial analyses, microbiological physical-chemistries and, of comparative form, the honeys, collected for the producers and researcher, of mellifera Apis bee of the cities of Codó and Itapecuru-Mirim, pertaining to the region of the Cocais, Maranhao State.  It observed in the first, collected in such a way for the producer how much for the researcher, presented a bigger water text (average humidity of 21,05%) when compared with the second (20.98%), making it difficult its storage, therefore the high water text of the product diminishes its useful life of shelf. For total acidity, the value highest was for the honey produced in Codó (79.19% to 91.80% b), when compared with the honey produced in Itapecuru-Mirim (37.78% to 48.36% b), what it can be explained by the temperature difference, being higher in Codó, For the values of pH the honey of Itapecuru_Mirim was gotten presenting lower value (3,2).  For reducing sugars, the honey of Itapecuru - Mirim it presented average of next values (64.14% b - 64.20%) to the demanded minimum as standard. For the values of sacarose the samples of Codó, had presented minors average values of (23.59% b 24.29%); in the parameter you sweeten totals the samples of Itapecuru_Mirim presented greater average index (93,73). For the HMF analyses the samples of Codó had presented average values (67,77a the 76,33b). For the too much studied parameters it did not have significant difference between  treatments.

Chemical and microbiological stability of bacon produced with natural smoking: A practical analysis aiming at improvements in the identity and quality standards

Around 70% of the pork consumed in Brazil is in the form of processed meat, with bacon being the main one. Although there is indicative information in Brazilian legislation about some identity and quality standards for bacon, there are currently discrepancies between what is in the literature, what is actually practiced in companies and what the inspectors define as ideal. In certain cases, the producer himself defines, together with the inspection, the criteria for these products. Thus, the objective of this study was defined in evaluating the characteristics of bacon produced by natural smoking, its identity and quality standards in order to provide subsidies for production standardization for a local slaughterhouse. Five batches of ham bacon with 3 kg each were used, being collected weekly. These lots were packaged and analyzed between periods of 0, 30, 60 and 90 days. Proximal composition, water activity, pH, color, sodium nitrate and nitrite, sodium chloride and monitoring of lipid oxidation were quantified during storage days. The microbiological assessment was followed during the 90 days of storage, through counting of coagulase-positive Staphylococci, sulphite reducing Clostridia and total yeast and mold counts. Via these analyses, the conclusion is that the product does not present a defined production pattern, each batch being produced with different physical-chemical profiles, however the microbiological control is efficient. Another relevant aspect to be concluded is that the useful life cannot be extended, since the microbiological and oxidative patterns can be compromised.

The experiment was carried out through four treatments with the following formulations: T0 (70% UHT skim milk and 30% whey), T1 (70% buttermilk and 30% whey), T2 (60% buttermilk and 40% whey), T3 (50% buttermilk and 50% whey). The average treatment values did not differ among themselves, at a 5% level of significance, regarding pH, acidity, viscosity and color. The protein and fat levels decreased with the increase of the amount of buttermilk in the treatment formulations. There was no significant difference, at a 5% level of significance, in the average acceptance values of the 57 judges for flavor, texture, aroma, color and overall impression, with values above 8.0 (9 point scale) for all attributes. In the purchase intention test, there also were no differences, with averages superior to 5.4 (7 point scale) for all formulations. All formulations had counts of total coliforms and E. Coli within the acceptable range, taking into consideration the legislation for fermented dairy beverages. Regarding the lactic acid bacteria, the counts were superior to 1.3 x 107 CFU g-1 and also in accordance with the legislation. It was concluded that the use of buttermilk in the production of fermented dairy products is technologically feasible.

Evaluation of an age estimate method by dental mineralization of third molars

Forensic Dentistry uses dental mineralization to estimate age, in order to assist the estimation of cadavers and also living humans. The purpose of the study was to evaluate the reliability of the method proposed by Cornélio Neto (2000) to estimate human chronological age by analyzing third molars mineralization. The study used 150 panoramic x-rays of people from both sexes, on the age between 15 and 22 years and who had at least one of the third molars. According to the classification in Nicodemo, Moraes and Médici Filho (1974) and adapted by Cornélio Neto (2000), the mineralization stages of each element present on the radiography were recorded by a previously calibrated examiner. After the mineralization stages were stated, they were intented in the formulas developed by Cornélio Neto (2000) to estimate age, which varies according to each of the third molars and the sex of the owners. For data analysis, the Intraclass Correlation Coefficient test was performed, using the SPSS software (Version 27, Chicago, USA). In males, the tooth with the highest agreement rate was the eighteen, whereas in females, teeth were thirty-eight and forty-eight. The classification of agreement, proposed by Fermanian (1984), points out that the assessed third molars had a moderate correlation between real and estimated ages. Therefore, this method can be used as a complementary exam to estimate an individual's real age, requiring other studies to corroborate his estimate.
